
(Here’s what my version looked like before heading in to the oven).
Ingredients:
- 100g Pork Mince
- 2 teaspoons fennel seeds
- 1/3 cup coarsely grated carrot
- 2 spring onions, thinly sliced
- Sea salt and ground black pepper
- 12 large fresh jalepenos
- 12 slices of prosciutto, halved crosswise
- Lemon wedges to serve
Method:
- Preheat the oven to 200 degrees and line a baking tray with baking paper.
- Slice the jalapenos lengthways, removing the seeds.
- Mix the pork, carrot, spring onions, fennel, salt and pepper (to taste) in a bowl.
- Stuff the halved jalapenos with the mixture, pressing down firmly. Wrap a piece of prosciutto around each one and lay upwards on the baking tray.
- Bake for 25 minutes or until the pork is cooked and the jalapenos are golden. Serve with the lemon wedges and with a Bloody Mary.
Cry baby? Try stuffing small yellow and orange peppers for guests who want a milder flavour.
